It is sweeter than sugar, so use less
Agave is roughly one and a half times as sweet as cane sugar — use about two-thirds as much and adjust. Two bags last longer than you would think for exactly that reason.
Why the powder rather than a syrup
It adds no moisture, so it substitutes into baking the way sugar does rather than the way a syrup does. That makes it far more forgiving in a recipe.
