Being straight about what this is
Coconut sugar is sugar. It is largely sucrose, and it counts on the Nutrition Facts panel the same way cane sugar does. We are not going to describe it as a reduction, because it is not one.
What it actually offers is flavour and the fact that it is unrefined. If you want a sweetener with fiber and no added sugars, that is our chicory root syrup, not this.
What it tastes like
Warm and caramelly, closer to a light brown sugar than to white — but drier and less molasses-forward than brown sugar. It has a faint butterscotch note and does not taste of coconut at all.
Why the 1:1 matters
Nearly every sugar alternative changes the arithmetic of a recipe. Syrups add moisture. Allulose is less sweet and browns faster. High-intensity sweeteners add no bulk. Coconut sugar just swaps in, cup for cup, and behaves the way the recipe expects.
Two small differences worth knowing: it is a little drier than brown sugar, so it does not pack the same way, and it makes baked goods slightly darker.
How to use it
- Coffee and tea — dissolves well, and the caramel note suits a dark roast
- Baking — straight 1:1 for white or brown sugar
- Oatmeal and yogurt — sprinkled
- Rubs, marinades and barbecue sauce — where the caramel character earns its place
- Rim a glass — it works where you would use demerara

No. We are not USDA organic certified and we do not use the word. If you find an older listing that says otherwise, it is out of date.
Is it lower in sugar than cane sugar?
No. It is a sugar, and it counts as one. The reasons to choose it are the flavour and that it is unrefined.
Does it taste like coconut?
No. It is made from the sap of the coconut palm, not the fruit, and it tastes of caramel.
Can I swap it for brown sugar?
Yes, 1:1. It is a little drier, so it will not pack into a measuring cup the same way — spoon it in rather than pressing it down.
