Unsweetened desiccated coconut. One ingredient, finely shredded, and no sulphur dioxide. That last part is the one worth knowing about.

No sulphites, which is unusual

Most dried coconut on a supermarket shelf is treated with sulphur dioxide to keep it white. Ours is not. It is a shade creamier as a result and it tastes more like coconut, and it matters to anyone who reacts to sulphites.

It is also unsweetened. Sweetened shredded coconut — the kind in most baking aisles — can be a third sugar by weight. This is coconut and nothing else.

What it tastes like

Properly coconutty and a little drier than sweetened flake, because there is no sugar syrup coating it. If you have only used the sweetened kind, this will taste less like a confection and more like the fruit.

How to use it

  • Toasted, over anything — a dry pan, medium heat, three minutes, stirring. This is the single best thing you can do with it
  • Porridge, yogurt and smoothie bowls — texture on top
  • Baking — macaroons, granola, energy bars, coconut cake
  • Curries and dals — toasted and blended in, the way it is used across South India and Southeast Asia
  • Coating — for truffles and dipped fruit

If a recipe calls for sweetened shredded coconut, this will work but the result will be less sweet. Add sweetness elsewhere rather than more coconut.

Is it certified organic?
No. We are not USDA organic certified and we do not use the word. If you find an older listing that says otherwise, it is out of date.

Is it sweetened?
No. Nothing has been added — no sugar, no sulphites, no preservatives.

How should it be stored?
Sealed, cool and dry. Coconut has natural oils, so keeping it away from heat and light keeps it fresher for longer.

Is this the same as coconut flakes?
Same fruit, different cut. This is finely shredded, so it blends into batters and coats evenly. Flakes are wider and are better as a topping.

No one is perfect. Just have good balance.
